Pulled Pork Experiment


Vinegar Mop for Pulled Pork(also called an Eastern Carolina Sauce)
  • 2 cups cider vinegar
  • 1/2 cup brown sugar (packed)
  • 2 tablespoons salt (I like the flavor in Kosher/Sea Salt and bigger granules)
  • 2 tablespoon red pepper (crushed)
  • 1 teaspoon cayenne (I've also used Hungarian Paprika)

Virgin Mustard Sauce 

  • 4 cups yellow mustard 
  • 1 cup lemon juice 
  • 1 cup honey 
  • 1/2 cup cider vinegar 
  • 1 teaspoon salt 
  • 1 teaspoon cayenne 
Brine:
8 ounces or 3/4 cup molasses
12 ounces pickling salt
2 quarts bottled water
6 to 8 pound Boston butt
