Vinegar Mop for Pulled Pork(also called an Eastern Carolina Sauce)
- 2 cups cider vinegar
- 1/2 cup brown sugar (packed)
- 2 tablespoons salt (I like the flavor in Kosher/Sea Salt and bigger granules)
- 2 tablespoon red pepper (crushed)
- 1 teaspoon cayenne (I've also used Hungarian Paprika)
Virgin Mustard Sauce
- 4 cups yellow mustard
- 1 cup lemon juice
- 1 cup honey
- 1/2 cup cider vinegar
- 1 teaspoon salt
- 1 teaspoon cayenne
8 ounces or 3/4 cup molasses
12 ounces pickling salt
2 quarts bottled water
6 to 8 pound Boston butt
Cider Brine
- 6 cups apple cider
- 4 cups water
- 2 cups apple cider vinegar
- 1/2 cup salt
- 1/2 cup brown sugar
- 1/2 cup Worcestershire sauce
- 2 tbsp garlic powder
- 2 tbsp onion powder
